This is one of those things that you keep on postponing but actually realise you should have done ages ago once you get them done. It’s a delicious snack you can create at home and it lasts forever if you keep it in the freezer, and once you do you can’t go without it; it’s lactose and gluten free, therefore tummy-friendly and singers-friendly (no bloating, no phlegm). Here it’s the recipe.
Chocolate Protein Bars
– 150g Oats
– 75g Shredded coconut and a bit more to stir in
– 75g Whey Protein
– 150g Medjool Dates
– 75g Pecan Nuts and a few more to stir in
– 75g Raw Cocoa Powder
– a handful of chocolate nibs
– a bit of water from soaking the dates
Soak the dates in water for 1/2 hour
In a food processor blend the oats, protein powder and cocoa powder.
Then add the dates (drained), coconut and pecan nuts. Blend again.
At this point add some of the water you soaked the dates in if you need, to make a consistent paste.
Then stir in bits of pecan nuts, coconut and chocolate nibs to taste.
Blend everything well and spread the mixture onto baking paper, then put another sheet of paper on top and roll it with a roller to make a 1cm thick layer. Put it in the fridge for 2-3 hours. Then cut the thing into strips. You can freeze them and eat them slowly or you can eat them all in one go (sharing is caring!).
